Aubergine, just for me…

Roasted Aubergine.

No one in my family likes aubergines, so it’s not often, that I use them, but sometimes, when I want something special to eat, just for me, I make this dish.

I like aubergine stuffed with onions ,carrots, tomatoes, mushrooms and garlic. I use Italian extra virgin olive oil. And on the side I like fresh salad- lettuce, cucumber, dill and parsley. Sometimes I add olives. Sprinkle with chia seeds, sea salt and black pepper.

Easy and delicious.
